This is one of the largest growing lines of vegetables consumed in South Africa over the past 20 years. A carrot is a root vegetable. China grows 46% of carrots for global output. Only 3% of B-carrotene in raw carrots is released during digestion. This improves to 39% by pulping, cooking and adding cooking oil. Carrots are eaten fresh, chopped, boiled, fried, steamed, cooked in soups and stews and also used in baby and animal food.
